How can I update the relationship properties (such as e.g. percent consolidation) using grid view?

In the grid setting, check the “Display Parent Child Relationship” flag. You can select the relationship properties and set them for each parent-child relationship.

This only works for default time/scenariotype, correct? If I select a specifics, the grid view becomes greyed out.

Correct, for other scenario types / time you can use the grid view to review but not to update.
