Modifying QuickViews

Does anyone know how to add another row or column level dimension to an existing QuickView? The rebuild button in the Panel doesn't seem to be activating or changing anything.

Can you please show me how to do it properly? Also doesn anyone recommend any beginner video tutorials, there doesn't seem to be much online.
