Does anyone know the process for activating mobile dashboards/cube views?

Nothing for cube views. For dashboards, you need to set IsMobile = true on the maintenance unit. Note, once this setting is configured it cannot be changed, and unfortunately, many of the standard maintenance unit's have this set to false by default.
Every application should have a mobile environment created as well. If you don't know the URL, contact support and they should be able to tell you.
However there is a different url, and the mobile web config needs to be set up just like the app and web config files point to the config folder.
